2 teaspoons coconut or rice vinegar (halved)
2 teaspoons soy sauce (halved)
2 teaspoons toasted sesame seed oil (halved)
¼ cup yellow bell pepper sliced
¼ cup broccoli florets
½ cup mushroom slices
½ cup MightyBee virgin coconut meat
1 teaspoon coconut sugar
½ teaspoon grated fresh ginger
¼ cup MightyBee virgin coconut water
¼ cup water
1 baby corn
coriander or Thai basil leaves
1. In a bowl combine bell pepper, broccoli and mushroom slices.
2. Mix vinegar, soy sauce and sesame seed oil together and add three teaspoons of this mix to the vegetables.
3. Let marinate and in the meanwhile blend together coconut meat, coconut sugar, ginger, coconut water and water until very smooth and slightly warm.
4. Add the liquid to the marinated veggies. Top with coriander or basil leaves and slices of baby corn.
